A CONVERSATION WITH MIKEY NEWLANDS, HEAD CHEF AT BRACU
This year at Taste of Auckland, for your tastebud’s pleasure, Bracu has curated a sumptuous four-item offering. Fresh from the rolling ocean, Mikey’s whipped up two dishes: sustainable tuna, chorizo oil, a drizzle of lemon juice, on a bed of fluffy potato espuma, and an instant-classic in the form of a delectable South Island whitebait omelette. If you’re not already salivating, envision a yorkie stuffed with barbequed beef cheek, kimchi, horseradish, and southern fried onions. Dessert lovers will be in heaven with a roasted white chocolate icecream sandwich, dappled with raspberries and hazelnut.
We caught up with Mikey to find out what makes him, and the kitchen at Bracu, tick along so successfully. Read the interview here.
